• Migrate from deprecated shadcn default theme to the new york

  Shadcn deprecated the "default" theme and is now using "New York" as the default. We will upgrade all classes and references from the components to match the new default theme in this milestone. We should also pay attention to the previous Tailwind 3 migration [missing pieces in the code](https://github.com/ruby-ui/web/blob/main/app/assets/stylesheets/application.tailwind.css#L95).
