[Improvement] Show the global info message instead of *

Description

We should review when we obtain * from the backend and return the proper info in the console.

Expected behavior

Instead of showing *, show "All Organizations" and "Global" (in Scope).

Instead of course-v1:*, showing "All courses"

Shall we display "All courses in <Org>" when is courses-vi:<org>:* (same for libraries) or this is managed by the backend?
